my take on Betty’s biscuits

I know, this happens about once every two years. If that often.

My sister cooks.

I cook because I have a big family and eating out isn’t so much in the budget, not because I really want to spend time in the kitchen.

A few weeks ago I posted a picture of biscuits and jam on Instagram. A few people asked for more details on the biscuits – thus, today’s post.

For starters, the recipe is not mine, but I do add my own twist. When I got married I was given a classic Betty Crocker cookbook. It has been used regularly for 11 years. Betty covers it all. Nothing fancy. No strange ingredients. Just basic down home cooking. Thank you Betty.

In the cookbook it says they take about 22 minutes to make. Online it says it takes 45 minutes. I, however, say 15 minutes. It takes me 5 minutes to make and 10 minutes to bake. I can’t figure out why online it says 45 minutes…that would be moving so slow. Maybe real cooks like do things really slow and savor the process or something.

After following the basic recipe, I change things once it gets to the rolling out part. I roll out the dough about 1/4″ thick (Betty does 1/2″). I use up all the dough…making 24 circles.

Next, I stack two circles together. The result is 12 biscuits – same as Betty.

The circles are not mashed or pressed together. Then I bake according to Betty’s instructions.

Once out of the oven, I have 12 biscuits that pull apart perfectly in the center. This means I don’t have to cut my biscuits and make them all crumbly. The centers are still soft like when you cut a biscuit, but you don’t have to cut! They have a perfectly smooth surface to add my butter and jam.

Don’t judge my amount of butter. I am on a quest to gain back all the weight I lost while waiting to bring Little One home.

And while I was delighting in my butter, Lesley’s jam and making my kids wait until I got photos….they were doing this….my oldest needs more butter too 🙂

And for those that wonder about photography on my blog – I made these for lunch because there is better lighting than the dark hours of the morning.
