Strawberry Shortcake

I’m not a cook. I cook to survive, not to have fun. I’d rather take random photos like below, than cook and clean up the mess from cooking.

However, I have a family of 6. Cook I must. Desserts are not a must, but they sure are yummy. One of my favorite things to eat in the summer is home made strawberry shortcakes. My favorite recipe (because is is tasty and FAST to make) so far is out of a 2005 Martha Stewart FOOD magazine. You can find the exact recipe here. I am not posting it, because it is not mine so you have to visit Martha for it. I did tweak it a bit below.

I do enjoy photographing the cooking process….

Step 1: Slice fresh strawberries. The recipes suggests adding sugar to the strawberries to form a syrup. I don’t add any sugar. I like them just as they are.

Step 2: Mix dry ingredients

Step 3: Use a pastry cutter or food processor to mix until just combined.

Step 4: Add milk. DO NOT OVERWORK it at this stage, just get it mostly mixed.

Step 5: Pour onto a floured surface

Step 6: Pat into a 4×8 inches rectangle

Step 7: Cut into pieces

Step 8: Place on a baking sheet

Step 9: Sprinkle sugar on top

Step 10: Bake

Step 11: I always prefer home made whipped cream. If you have never made it, well it is super easy. All you do is pour heavy whipping cream into your mixing bowl and begin mixing. Use the highest speed you can without cream flying out the bowl. As the cream thickens increase the speed all the way. Once whipped up good mix in powdered sugar. I use just a little bit…maybe 3 tablespoons. You can add it to your liking…go slow so it doesn’t get too sweet.

Enjoy! This dessert is best eaten the day it is made. I have had it the following day and it is okay, but not great. The strawberries and whipped cream are good together without the shortcake too!
